Campbell’s® Italian
Vegetables and Pasta
Prep/Cook Time: 25 min.
1 tbsp. olive or vegetable oil
2 medium carrots, thinly sliced
1 medium zucchini, sliced
1 medium onion, sliced
1 cup CAMPBELL'S Tomato Juice
1⁄4 cup grated Parmesan cheese
1⁄4 tsp. dried oregano leaves, crushed
1⁄4 tsp. garlic powder or 2 cloves garlic, minced
2 cups cooked medium tube-shaped, medium shell or
corkscrew pasta
HEAT oil in skillet. Add carrots, zucchini and onion and cook
until tender-crisp.
ADD tomato juice, cheese, oregano and garlic. Heat to a boil.
Cover and cook over low heat 5 min. or until vegetables
are tender.
ADD pasta Heat through. Serves 4.
